Lotus Root Pork Ribs + Black beans + Peanuts + Red Dates + Wolfberry Soup

Lotus Root Pork Ribs + Black beans + Peanuts + Red Dates + Wolfberry Soup
Ingredients:
250gm Pork Ribs
2 Sections Of Fresh Lotus root, about 600g
100g Peanuts
50g Black Bean
4 - 5 Red Dates
1/2 Tablespoon Wolfberry Goujizi
1.5 - 2 Litres Of Water

Methods:
1. Wash and cut the fresh lotus roots into thin slices and set aside.
2. Wash both the peanuts and black bean then soak in warm water for a while. Drain and set aside.
3. Put above ingredients in a pot, add required amount of water and bring to boil.
4. Add pre blanched pork ribs to boiling water.
5. Simmer over low heat for 45 min to an hour
6. Add 1-2 tablespoon of tiparos fish sauce to taste in the last 10 min of boiling.
7. Transfer to thermal pot.

Rainbow Fried Rice

Rainbow Fried Rice
Ingredients:
• Red – ½ red capsicum, diced
• Orange - 1 carrot, peeled and diced
• Yellow – ½ yellow capsicum, diced, minced garlic
• Green - ½ green capsicum, diced
• Blue/Indigo – 1 red onion, diced
• Violet - 200gm minced pork
• 5 button mushrooms sliced
• Cooked rice
• 2 teaspoons oil
• 2 eggs, lightly beaten
• 2 tablespoons soy sauce
Method:
1. Heat 1 teaspoon of the oil in a wok over high heat. Pour in the eggs and cook as an omelette, turn, cook until firm. Transfer to a plate and cut into thin strips.
2. Heat remaining teaspoon of oil in the wok over high heat. Saute some minced garlic and onions. Add mushrooms in and fry till limp. Add minced meat in. Add a little oil, breaking it into little pieces.
3. Add capsicums and carrot and cook for 2 minutes. Add soy sauce, mix through, then add rice, egg strips and cook until heated through. Stir well and serve.

Chinese Yam with pork ribs soup

Chinese Yam with pork ribs soup
Ingredients:
250gm pork ribs
500gm fresh Chinese yam
2 slices of ginger
4 pieces of garlic
10 soup bowls of water
2 soup spoons of fish sauce
Directions
1.Peel the fresh yam and cut into bite-sized pieces.
2.Bring water to a boil.
3.Blanch pork ribs and add to the boiling water. Add ginger and garlic and boil for 30 min
4.Add the Chinese yam and cook for another 10-15 min
5.Add in fish sauce for taste and boil another 10 min. Transfer to Thermal pot.
